A steak salad, another perfectly good catch-all for all of the things in your fridge that you no longer have plans for. Chris and I had an abundant version of a steak salad for dinner a few nights ago that was so satisfying, hearty and healthy I think I could eat it for dinner every night and be happy.
You can make a delicious steak salad with just about anything you like/have in your pantry right now! For the greens, I had some arugula, spring mix and radicchio laying around but you could use spinach or romaine. For the accoutrements, we decided on avocado, radishes, cucumbers, onion, cherry tomatoes and broccoli, but again, you can use what you like best in a salad or whatever is starting to look the saddest in your fridge. As for the cut of steak, we used a strip but a grilled flank steak, hanger steak or flat iron would be just as delicious.
I dressed the salad with a balsamic vinaigrette that was simply balsamic vinegar, olive oil, dijon mustard and a pinch of salt and pepper.
