I, surprisingly, had some free time a few mornings ago which found me deep in the throes of a full-on buttermilk biscuit craving. I indulged. I made some quick and easy drop biscuits with lemon zest and fresh parsley which ended up serving as the perfect accompaniment to Misty’s Blueberry Lemonade Jam and some of my fresh ricotta cheese.
These ended up being just the sweet treat that I was craving insatiably and a all around fantastic way to start a day!
Lemon Parsley Drop Biscuits with Blueberry Lemonade Jam, Fresh Ricotta and Honey
- 9 ounces all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 ounces chilled butter, diced
- 6 ounces cold buttermilk
- zest of one lemon
- 2 teaspoons minced fresh parsley
- freshly cracked black pepper
- Joyful Jars Blueberry Lemonade Jam
- fresh ricotta cheese, recipe here
- Orange Blossom Honey, preferably local, for drizzling
In a mixing bowl, combine the flour, baking powder and salt and whisk gently to combine. Add the butter and pinch and smash it into the flour, making little shingles out of the butter, until the mixture resembles coarse meal.
Add the lemon zest, parsley and buttermilk to the bowl and stir to combine with a fork until the dough begins to come together. Work in the bowl with your hands, pushing and folding the dough, until all of the flour has been picked up from the sides and bottom of the bowl.
Refrigerate while you preheat the oven to 400 degrees.
On a baking sheet lined with parchment paper, pull off about 2 ounce sized portions (a big pinch of dough) and roll into a rustic ball and place about an inch apart. Sprinkle with freshly cracked black pepper and bake for 30-35 minutes, they should have risen a bit and turned golden on top!
To enjoy, while still hot, cut one of those pillows of delight in half and smear on some fresh ricotta cheese, slather generously with the blueberry lemonade jam and drizzle honey over the top!
The tender biscuits give way to the sweet and creamy flavors of the ricotta and jam, the black pepper and the blueberries really complemented each other and the lemon flavors in both the biscuits and the jam tied everything together with the honey adding a nice, floral touch.
